Mushroom Soup

Mushroom Soup

Ingredients:

10 oz button mushrooms
1 teaspoon Sunflower oil
1 ½oz butter
1 Small onion finely chopped
¾ pt veg. stock
Cornflower to thicken (1 tbsp)

Method

Heat oil & butter add onion & mushrooms.
Fry for 1-2 minutes stir frequently.
Cover & sweat over gentle heat for 6-7 minutes
Add stock & cornflower.
Bring to boil & simmer for 15 minutes.
Cool slightly & puree.
